Add the 1 pound pork tenderloin (already trimmed and cut crosswise into 1 inch thick medallions) and cook until golden, 1 to 2 minutes per side. Add 1/4 cup cider, 1 tablespoon maple syrup and 1 teaspoon of cider vinegar to the pan. Bring to a boil, scraping up any browned bits. Reduce the heat to medium and cook, turning the pork occasionally to coat, until the sauce is reduced to a thick glaze, 1 to 3 minutes. Serve the pork drizzled with the glaze.

Oven-Fried Fish Recipe

1. Heat the oven to 350F/180C/gas 4. Cut 4 skinned salmon fillets into strips.

2. Mix 85g (3/4 cup) wholemeal breadcrumbs (easily made in a food processor or sturdy blender) with 2 tbsp finely chopped parsley and 50g (1/2 cup) grated cheese. Parmesan is the best, but you can use Cheddar or any other hard cheese you have.

3. Spread this mixture on to a plate. Beat 1 egg, and spread 50g (1/2 cup) flour on to another plate.

4. Dip each fish slice first into the flour, then into the egg, and finally into the breadcrumbs to coat.

5. Place fish on a lightly oiled baking tray and cook in the oven for 15 minutes until the fish is cooked.

Apple Almond Crunch Salad

Use a large salad bowl to combine 1 (10 ounce) package of mixed salad greens with cup slivered almonds, 1/2 cup crumbled feta cheese, 1 cup tart apple (cored and chopped), 1/2 cup sliced red onion and 1/4 cup golden raisins. Toss until blended and apply the raspberry vinaigrette salad dressing for individual servings.

Scrambled Egg Pasta Recipe

1. In a small bowl, beat together 4 eggs and 1/2 cup grated Parmesan cheese; set aside.

1 litre water
3 chicken stock cubes
1 red capsicum, sliced and deseeded
2 carrots, peeled and sliced into thin rounds
3/4 cup (105 g) frozen corn kernels
1 small onion, peeled and chopped
75 g dried thin egg noodles
250 g skinless chicken breast fillets
125 g chopped broccoli
2 tablespoons medium dry sherry
1/4 cup (15g) chopped chives
salt
pepper
garlic

Directions:

1. Pour water into large saucepan and place over high heat.
2. Crumble chicken stock cubes and add to water; whisk until stock begins to boil.
3. Add the capsicum, carrots, corn, onion, and egg noodles. Bring stock back to a boil.
4. While stock is boiling, cut chicken into 2 cm cubes.
5. When stock reaches a boil, add chicken and reduce heat to medium.
6. Cover and simmer for 15 minutes.
7. Uncover pot, and add broccoli. Cook, uncovered, for 7-10 minutes, or until broccoli becomes tender.
8. Remove pot from heat. Whisk in sherry and chives. Season with salt, pepper, and garlic to taste. Serve immediately.

Welsh Rarebit

Ingredients:

1/4 cup (57 g) of butter
1/4 cup (32 g) of plain flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dry mustard
1/2 teaspoon Worcestershire sauce
1/4 teaspoon cayenne pepper
250 ml (1 cup) milk
1/2 cup (125 ml) beer
227 grams (1/2 lb) grated Cheddar cheese
Bread for toasting

Directions:

1. Over low heat, melt butter in a large pan.
2. Whisk in flour, salt, pepper, dry mustard, Worcestershire, and cayenne pepper.
3. Stir until mixture is smooth.
4. Remove from heat, stir in milk.
5. Return to heat and stir until mixture begins to boil.
6. Whisk in beer.
7. Add cheddar cheese and whisk slowly until all is melted.
8. Remove from heat and serve over toasted bread.

Toad in the Hole:

Ingredients:

8 pork sausage links
1 tablespoon oil
250g plain flour
4 eggs
250 ml milk
salt
pepper

Directions:

1. Preheat oven to 200 degrees Celsius (400 degrees F).
2. Pour oil into bottom of baking dish and place sausages on top in one layer.
3. Bake in preheated oven about 10-15 minutes.
4. In a medium bowl, add flour. Make a well in the centre of the flour and add half of the milk and the eggs.
5. Whisk in additional milk until batter is light and smooth.
6. Add salt and pepper to taste.
7. Remove sausages from oven and pour batter over the sausages.
8. Return to oven and bake about 30-40 minutes, or until centre is lightly browned.
9. Remove from oven and serve.

Ridiculously Delicious Raw Pasta

Ingredients:

2 medium-sized tomatoes
1 Ataulfo (yellow) mango*
Handful of fresh cilantro
2 zucchini or yellow squash, spiralized

*Ataulfo mangoes are much creamier than the more common Kent or Tommy-Atkins varieties (and much tastier, in my opinion).

Directions

Cut the tomatoes into quarters and place into a blender.  Peel and chop the mango into large pieces, close to the size of the tomato quarters.  Place the mango pieces in the blender.  Chop the cilantro and place in the blender.

Lightly pulse. Don’t blend it too much or it will get bubbly and yucky.  Pour over the spiralized squash.

I especially like to eat this as a sauce over spiralized zucchini or yellow squash, but you could also use it as a dressing for any greens of your choice.  You could also just eat it on its own as a soup.

The mango-tomato-cilantro combo is just so delicious! 🙂

Salty Salt-Free Salsa

Ingredients:

24 ounces cherry or grape tomatoes (sweetest you can find)
16 ounces of celery (4-6 stalks)
8 ounces red bell pepper (1 pepper)
4 ounces sweet apple (Gala or Fuji, 1/2 apple)
1 handful cilantro
1 English cucumber, sliced diagonally*

*I prefer the English variety.  They are less watery than traditional cucumbers and have much more flavor.

Directions:

Cut half of the celery, red bell pepper, and all of the apple into medium-sized pieces.  You want each piece about the same size as the tomatoes.  Pulse half of the tomatoes and cilantro with the celery, pepper, and apple chunks.  You want a slightly chunky mixture, not a puree.

Dice the rest of the tomatoes, celery, bell pepper, & cilantro.  Stir blended portion with the diced portion and devour with cucumber slices or any veggie you like.

Not-So-Pretty Pistachio Dressing

Ingredients:

2 medium tomatoes
1 medium cucumber
1 oz pistachios
1 head romaine lettuce

Directions:

Coarsely chop tomatoes, half the cucumber, and pistachios and blend.  Spiralize the other half of the cucumber, chop the lettuce, and mix together with the dressing.  This is a very savory and hearty salad that I love to eat during the winter.
